Meropi Kyriacou Honored as TNH Educator of the Year
NEW YORK – Meropi Kyriacou, the new Principal of The Cathedral School in Manhattan, was honored as The National Herald’s Educator of the Year.
After a long and hard winter, in the midst of a difficult year, we are all looking for comfort in the days ahead as we anticipate spring and a return to normal. Among the changes we have all experienced this year, many of us were unable to travel to Greece as the global pandemic placed everyone's travel plans on hold indefinitely. My husband and I have been using food and drink as a means of reminding our palate of our travel experiences (beyond the now all too familiar boundaries of our NYC apartment). This cocktail in particular is a recipe for comfort, especially on cold winter nights. Despite its simplicity, this is a classic drink that warms the stomach, comforts the soul, and can pack quite a punch! We have adapted this recipe from my in-laws, who used to sip on this drink in their hometowns in Greece when feeling under the weather. With few ingredients, you can quickly whip this up for yourself!
Greek Hot Toddy
(Serves 2)
Ingredients:
4 oz Metaxa
1 tablespoon Greek honey
Directions:
Warm Metaxa on stovetop until just simmering. Mix in honey on low heat. Pour into glass. Serve warm and enjoy!
