In Florida, Bill Sinis’ Scuola Takes You to Pizza School, Greek Style

Taking a chance during the ongoing pandemic, but in a state reluctant to close down the economy with lockdowns, restaurateur Bill Sinis is opening a Greek-inspired restaurant in Gainesville.
It's the home of the University of Florida and college students have a hunger for what he’s going to dish up at Scuola’s Pizza, which also has a select variety of Greek foods, said WCJB.
The name comes from the Italian word for school which must have seemed catchier than the Greek word, Scholeio but when you’re biting into an Athena pizza with feta you won’t care.
He said he got the idea after spending five years in Greece teaching English and wanted to bring Greek culture to Gainesville.
“The city has been very gracious to me, the people I’ve worked with, my neighborhood I live in, so it’s just been a good experience for me,” said Sinis. “I always said if I opened up another restaurant I don’t want it to just serve food. I want it to be something more than that so I’m bringing out a little bit of me in this restaurant.”
