Kolokotes – Squash Pies/Turnovers 


½ Cup Raisins 

¾ Cup Fide (thin noodle) broken into pieces 

9 Cups Cubes Butternut Squash 

¾ Cup Bulgur Wheat (Fine) 

1 Cup Water 

Salt & Pepper 


4 Cups Flour + extra for dusting 

½ Cup Soybean or Vegetable Oil 

1 ½ Cup Water 

Pinch of Salt 


  1. Add flour, water, oil & salt in a bowl and mix until dough is formed. Shape into a large ball and cover with plastic wrap. Set aside and let rest for 10-15 minutes.  
  1. Boil 1 cup water and add to a bowl with bulgur. Cover with plastic wrap and allow bulgur to absorb the water.  
  1. In a small skillet, heat the oil and add the thin noodle. Sautee for a few minutes until slightly browned. 
  1. In a large bowl, combine squash, raisins, thin noodle and bulgur. Add salt & pepper to taste, cover with plastic wrap and set aside.  
  1. Preheat oven to 400 degrees. 
  1. Flour work surface and remove half the dough. Form a log and cut into 2” pieces. Use a rolling pin to roll out the dough into a circle (approx. 7-8” in circumference). Repeat with all the dough.  
  1. Spoon approx. 2-3 tbsp of squash mixture into each round.  
  1. Fold dough over mixture, so both ends of the dough meet (will resemble a semi-circle). Fold over edge in parts and press to seal. 
  1. Place turnovers on a baking sheet lined with parchment paper.  
  1. Bake for 30-35 minutes 


Makes approximately 24-26 turnovers. 


While the winter may seem like a tough time for seasonal fruits and vegetables, there are still leafy greens available to enjoy in a variety of dishes.
