Meropi Kyriacou Honored as TNH Educator of the Year
NEW YORK – Meropi Kyriacou, the new Principal of The Cathedral School in Manhattan, was honored as The National Herald’s Educator of the Year.
In this week’s edition of TNH’s mixologist corner, we pay homage to the fearless Odysseus and his epic voyage from Troy to Ithaca. As we all know from Homer’s “The Odyssey,” he encountered many trials and tribulations on his journey – from the Lotus eaters, to Calypso, to the Sirens, and the Laestrygonians. He was also victim to the cruelty of Zeus and Poseidon as they did their best to render the seas impassable. Despite these many obstacles and hardships, Odysseus prevailed and returned to his beloved island to reclaim his throne.
Considering all the wine he consumed from Marion and the Cicones, we at TNH are fairly certain that had the option been available, the first thing Odysseus would have done was mix himself up a strong and refreshing Dark and Stormy to pay homage to his voyage and to commemorate his return to his island and his wife, Penelope.

Recipe:
2 oz Dark Rum (Traditionally Goslings)
½ oz Fresh squeezed lime juice
Ice
2-3 oz ginger beer
Additional sliced lime for garnish
Candied or Fresh ginger (Optional)
Directions:
Traditionally this is a shaken drink, but we have found that stirring the rum and lime juice produces a fine end result (almost) all the same.
Step 1: Fill a cocktail shaker with rum and lime and shake vigorously.
Step 2: Strain into a glass with fresh ice.
Step 3: Stir in ginger beer. Please note it can be quite sweet so we recommend starting with equal parts rum and ginger beer and then adjusting according to your preference.
Step 4: If using, skewer the lime and ginger and add as a garnish.
