Waukesha, Wisconsin used to have a lot of family-run Greek restaurants, especially featuring the go-to fast food the gyro, but they faded over the years – but now are returning thanks to Andreas Protopapas.
He’s opening Gyro House, what he told the Milwaukee Journal-Sentinel will be an “authentic” Greek restaurant offering a lot more than the staple people turn to for flavor and affordability.
He said he was motivated by the closing of Gyros West at the end of 2023 that left a void for the favorite in the city, planning to set the table complete with tablecloths brought in from Greece.
“It’s not just gyros, you know,” Protopapas said. “It’s going to be like a Greek restaurant, Chicago-style,” referring to the city renowned for Greek family restaurants, the Billy Goat tavern immortalized on Saturday Night Live.
He left Greece in 1996, and has an accent, insuring authenticity for foods like kolokithakia tiganita. “That’s what I’m doing … It’s going to be amazing. You’re going to feel like you’re in Greece.”
