From Food Truck to Food Network’s Best Bite: The Think Greek Story

It began as a food truck in 2014 and became a restaurant in Port St. Lucie, Florida whose food was so good that the family-owned business wound up winning the Best Bite on the Food Network – twice.

“We are first-generation Greek Americans, so we knew when we started the food truck in 2014 that is what we wanted to do,” Think Greek General Manager Roseanne Leo told Entrepreneur about its plans.

“We didn’t want to (just) do regular Greek food. We wanted to incorporate a fusion menu, coming up with different items that people haven’t heard of before,” she said. They sure know now.

That included Gyropiteakia, a kind of Greek wontons that became a craze on the beach there and became the prize-winner on the show. The restaurant also blends new ideas with authentic Greek recipes. “It was just an incredible feeling because this is something that we came up with,” Leo said. “It wasn’t anybody else’s recipe. It was brainstorming one day on the food truck.”
