DENVER – John Fotopoulos grew up outside Chicago – a city of Greek food nonpareil – and was in the family restaurant business that began in the 1960s, and then opened Rocky’s Gyros in 1996, everyone a partner.

In 2009, he and his wife Mahe moved to Colorado, where she grew up.  “We actually met in Greektown, Chicago, go figure. … My parents and her parents are from the Tripoli area of Greece,” he told the site Westword.

In 2011, his family leased their restaurant to another couple, but, “They faltered, and I had to move back to Chicago to reopen it,” he said, before deciding to sell the business in 2022 because of the grind.

In May 2023 the Fotopoulos family began Grecian Gyros Express, a food truck on the streets of Denver, featuring family recipes that are traditional and based on his family’s experience in the Chicago gyro industry.

They have their children involved, in marketing and running the operation and right down to the cash register, Greek family style.
