Chef Costas Spiliadis Raises Bar for Greek Cuisine in Singapore With Milos

Renowned chef Costas Spiliadis, who said his career was driven by a desire to make the world know just how great real Greek food is, said he hopes to deliver it to customers in Singapore with his new venture, Estiatorio Milos.

He told the site Options he was excited to open his first eatery in Asia and that he had “heard a lot about Singapore’s vibrant dining scene and Singaporeans’ openness to new flavors and experiences.”

“We want Milos to set the bar [high] for refined Greek cuisine in Singapore one shared plate of delicious food at a time, embracing the sense of community and the art of dining well – a true representation of my heritage and culture,” he said.

He’s recommending first timers try his lightly fried zucchini and eggplant coated with a creamy tzatziki or a simple tomato salad he said is a testament to the quality of Greek produce, or grilled lobster with hand-cut Greek potatoes and ladolemeno sauce for a taste of Greece.
