Christmas: Caramel Macadamia Nut Pie 

Okay, so this is not a diet pie! But, it sure is something unique and special to have at your holiday party!

Serves 10


1 Never Fail Pie Crust Recipe

1 cup evaporated sugar cane juice

1/2 cup heavy whipping cream

3 tablespoons  butter, cut into pieces

1 teaspoon sea salt

3 cups unsalted macadamia nuts


Heat oven to 350° F with the rack in the lowest position.

Place the pie crust into a 9-inch glass pie plate and chill while preparing the filling.

Cook the sugar and 1/3 cup water in a medium pot over medium heat, stirring, until the sugar is dissolved, 2 to 3 minutes. Continue to cook, without stirring, until the syrup is a golden brown, about 15 minutes more.

Remove from heat and carefully (the mixture may splatter) add the cream, butter, and salt. Stir until combined. Stir in the macadamia nuts.

Transfer the mixture to the chilled pie crust and place on a rimmed baking sheet. Bake until the crust is golden brown, 45 to 55 minutes.

Cool completely and serve with vanilla ice cream.
