This fantastic salad has just the right blend of saltiness from the Halloumi cheese and sweetness from the berries. This is an unforgettable salad!
1 quart strawberries, hulled and cut into 1/4-inch slices
Juice from ½ a lemon
¼ cup extra-virgin olive oil
Sea salt and freshly ground black pepper
Grape seed oil
9 ounces halloumi cheese, cut into 8 thin slices
Fresh basil leaves
12 ounces mixed baby greens, rinsed and patted dry
In a bowl, drizzle the sliced strawberries with balsamic vinegar. Add the lemon juice and the olive oil. Season with salt and pepper.
Preheat a large frying pan to medium hot and add a little bit of grape seed oil, enough to cover the bottom. Press a basil leaf onto each slice of a cheese slice. Place the slices, leaf side down, in the frying pan and fry for a minute. Turn over carefully and fry for another minute until the halloumi is light golden.
Toss the strawberries with the greens. Divide the greens evenly on each plate. Place two pieces of halloumi on each.
