For Mother’s Day: Thyme, Greek Honey, and Granola

Did you know that KFC’s day of largest gross sales is Mother’s Day? Think about that for a second. Why not give mom a real treat with a selection of these easy to make recipes for a breakfast in bed or a memorable brunch?

Greek Thyme Honey Granola

Makes 2 servings

Ingredients:

Grape seed oil

2 Tablespoons Greek thyme honey

1/3 cup rolled oats

2 Tablespoons raw pine nuts

¼ cup corn flakes

¼ cup bran flakes

2 Tablespoons sunflower seeds

2 Tablespoons dried apricots, chopped

2 Tablespoons dried apple or raisins

Fresh seasonal fruit for topping

Directions:

Preheat the oven to 350 degrees F. Brush grape seed oil on a large baking sheet.

Spoon the honey into a medium-sized bowl. Gently heat the honey to make it thin. Add the rolled oats and stir gently to ensure they are evenly coated.

Spread the oats in a thin layer baking sheet and toast in the oven for 10–15 minutes or until golden. Don’t let them burn!

Remove from the oven and cool.

When ready to use, mix the clusters with the other dried ingredients. Add fresh fruit and serve with milk or yogurt.
