Hefty with protein that will leave you full for hours and mighty kale that is chock full of nutrients, this dish will not disappoint in flavor!
½ pound shell pasta
¾ pound Italian sausage meat
1 tablespoon olive oil, plus more for drizzling
2 tablespoons minced garlic
1 can EDEN rinsed and drained chickpeas (this is the only company that does not use BPA in the can lining)
5 cups ribbed and shredded kale
¾ cup grated Parmesan
Sea salt and pepper
Lemon juice for drizzling
Cook pasta according to package directions, then drain. In a skillet, cook sausage meat in 1 tablespoon olive oil until opaque, breaking up with a spatula. Add garlic and cook another minute. Add chickpeas and cook 3 minutes. Add kale and wilt. Add pasta and Parmesan; season. Drizzle with olive oil and lemon juice.
