Stuffed Turkey Meteors
A hit with kids, these are sure to please any crowd. This is such a unique way to use ground turkey!
Make 12 Meteors
2 lbs. ground turkey (I use 50% white and 50% dark)
1 ½ cups whole wheat bread crumbs
2/3 cup spaghetti sauce of your choice, plus more for dipping
8 ounces mozzarella cheese, cut into 12 cubes
1/2 tsp. salt
Preheat oven 350°.
Brush muffin pan with vegetable oil to prevent sticking and set aside.
Combine turkey, bread crumbs, sauce, eggs and salt in large bowl; shape into 12 balls. Into each ball, press a cheese cube, sealing meat around cube. Arrange in prepared muffin pan. Place muffin plan on cookie sheet.
Bake 30 minutes or until turkey meat is firm but still juicy. Let stand 5 minutes before serving. Top with additional sauce.
