There’s nothing like a club sandwich made with leftover roasted turkey. Much better for you with far less sodium than deli turkey! This adds a twist with delicious focaccia. You may also choose a bread or roll of your choice.
1/2 cup mayonnaise
1/2 cup whole-berry cranberry sauce
2 tablespoons chopped walnuts
2 tablespoons Dijon mustard
1 tablespoon honey
1 loaf focaccia bread
1 cup baby spinach
1/2 pound thinly sliced cooked turkey
1/4 pound sliced provolone cheese
8 tomato slices
6 strips of cooked bacon
In a small bowl, mix the first five ingredients until blended. Using a long serrated knife, cut focaccia horizontally in half. Spread cut sides with mayonnaise mixture. Layer bottom half with spinach, turkey, cheese, tomato and bacon; replace bread top. Cut into 4 even pieces.
